Boiled Fruit Cake
Ingredients:
350g/12oz Cream Flour
175g/6oz Granulated Sugar
125g/4oz Mixed Peel
1 teaspoon Mixed Spice
1 Egg
300ml/ 1/2 pint Water
125g/4oz Margarine
375g/12oz Sultanas
1 teaspoon Bread Soda
Method:
Put water, sugar, margarine and fruit into a saucepan and bring to the boil.
Let it simmer for 3 minutes.
Put it into a bowl and leave it go cold.
Sieve in the flour, spice and bread soda.
Add the egg and mix .
Pour the mix into a 18cm/7" lined and well greased square cake tin.
Bake in a preheated oven at 325°F, 160°C, Gas 3 for 1 -1 1/2 hours approx.
Check after 1 hour. If cake isn’t baked in the centre, cover the top, bake for a further 30 minutes.
