Pavlov Chocolate and Hazelnut Pie
Ingredients:
6 egg whites
A pinch of salt
500 grams of confectioner’s sugar
2 tablespoons of instant coffee
4 teaspoons of corn flour
2 teaspoons of vinegar
Toasted hazelnuts, slightly chopped to decorate
Double whipped cream
Truffle sauce, for serving
Method:
Preheat oven gas 230 degrees, electric 150 degrees.
Beat the eggs with the salt.
Add the sugar in small amounts while stirring.
Add the coffee, the corn flour, and the vinegar.
Pour into a 20-cm baking tin.
With a gas oven, lower the temp down to the minimum.
Bake for 1 ½ hours or until golden on the top.
With an electric oven, bake for 45 minutes.
Turn the oven off and let it sit with door shut for one hour.
When ready, take out of the oven and let it cool.
Cover with whipped cream, pour over the chocolate sauce.
Sprinkle with chopped hazelnuts.
