Boiled Fruit Cake
Ingredients:
350g/12oz Creamed Flour
175g/6oz Granulated Sugar
125g/4oz Mixed Peel (or 1 tablespoon Marmalade)
1 teaspoon Mixed Spice
1 Egg
300ml/ 1/2 pint Water
125g/4oz Margarine
375g/12oz Sultanas
1 teaspoon Bread Soda
Method:
Put water, sugar, margarine and fruit into a saucepan and bring to the boil.
Simmer for 3 minutes. Put this mixture into a bowl and leave it to go cold.
When its cold, sieve in the flour, spice and bread soda.
Add the egg and mix. Pour the mixture into a 18cm/7" square cake tin which is lined and well greased.
Bake in a preheated oven at 325°F, 160°C, Gas 3 for 1 -1 1/2 hours approx.
As some oven temperatures vary, check the cake after 1 hour. If the cake is not baked in the centre, cover the top and bake for another 30 minutes approx.
