Mandarin Layer Cake
Ingredients:
75g/3oz Self Raising Flour
75g/3oz Caster Sugar
3 Eggs separated
Pinch of Salt
Few drops Vanilla Essence.
Decoration275g/10oz Icing Sugar
175g/6oz Soft Margarine
25g/1oz Cocoa
1 Tin drained Mandarin Orange Segments
Chocolate Vermicelli or Grated Chocolate
Method:
Pre-heat oven to 200°C / 400°F / Gas 6.
Line a Swiss Roll tin 8" x 12" with greaseproof paper.
Bring the paper up 2 1/2 cm / 1" above the edge of the tin.
Put egg whites & salt into a bowl and beat until stiff.
Add egg yolks and sugar; beat until mixture thickens.
Fold in the sieved flour. Finally, fold in the vanilla essence.
Transfer to the tin and bake in upper shelf position for 12-15 minutes approx.
Cool on a wire tray.
Sift the sugar and cocoa into a bowl and beat in the margarine
When cold, cut the cake in three and layer with two thirds of the chocolate butter icing.
Spread icing on sides of cake and coat with vermicelli or grated chocolate.
Put thin spread of butter icing on top of cake and arrange segments on this in two or three rows.
