Spicy Energy Bar
Ingredients:
100g/4oz butter
75g/3oz caster sugar
2 eggs
2 tblspoons treacle
100g/4oz plain flour
1 teaspoon ground cinnamon
11/2 teaspoon baking powder
1 teaspoon mixedspice
225g/8oz raisins
50g/2oz chopped nuts of your choice (unsalted)
Method:
Mix the butter and sugar until light and fluffy.
Gradually add the eggs (already beaten )to the mix.
Add the treacle.
Through a sieve add flour, baking powder and spices.
Mix the raisins and nuts.
Smooth the mixture into a greased and lined 18cm/7in tin.
Bake for 15 - 20 mins in preheated oven at 180c/350f/gas4.
Allow to cool and cut into bars.
Ice the top if desirable.
