Lemon Pudding
Ingredients
50g softened butter
3/4 cup castor sugar
1 tablespoon grated lemon rind
3 eggs, seperated
1/4 cup self raising flour
1 cup milk
1/4 cup lemon juice
Method
Beat the butter, sugar, lemon rind and egg yolks together until light and fluffy.
ut the egg whites into a clean bowl and beat until they form stiff peaks but are not dry.
Sift the flourinto the creamed butter and sugar mixture alternately with the milk and lemon juice. The mixture will look curdled but its as it should be.
Fold in the beaten egg white. Pour the mixture into a well greased ovendish.
Bake at 160* for 30 minutes in a water bath. (dish put into a bigger dish and larger dish half filled with water.)
Serve with fresh cream or icecream. Yummy.
