Coconut Ice
Ingredients:
900g/2lb Castor Sugar
150ml/1/4 pint of milk
25g/1oz butter
225g/8oz desicated coconut
Food colouring of your choice
Method:
Line a 18cm/7in tin with greaseproof paper.
Mix the sugar, butter,and milk into a pan over a medium heat.
Bring the mixture to the boil while stirring continuosly.
Allow the mix to simmer for about four minutes.
Remove the pan from the heat .
Stir in the coconut.
Pour half the mixture into the lined tin and allow it to cool.
Add the food colouring to the remaining mix and pour over the mix in the tin.
Leave it to set for a few hours.
Cut the Coconut Ice into squares carefully as it may crumble.
